Chicken Cauliflower Fried Rice

Cauliflower rice, or cauliflower grated into rice-like bits, really does taste similar to rice, or at least it behaves similarly by soaking up all the flavor of its seasonings. It’s a healthy, low-carb dish that’s hearty enough to serve as the main course.

Ingredients

  • 240 g of chicken breast
  • 2 eggs
  • 4 cups of cauliflower rice
  • 2 cups of frozen carrot & pea mixture
  • 1/4 cup of green onions
  • 2 tbsp of coconut aminos
  • 1 tbsp of coconut oil

Method

Place the coconut oil into a pan on medium heat and allow it to melt. Add the chicken and cook until well done, then set aside. Add the carrot and pea mixture to the pan and sauté for a few minutes. Meanwhile, prepare the cauliflower rice by shredding the cauliflower floret in the food processor or using a cheese grater. Once the cauliflower rice is done add to the pan. Next add in the coconut aminos, salt, and pepper, and the chicken back in, mix well. Once the cauliflower resembles rice texture create space in the pan to add the eggs. Once the eggs are done, mix everything together. Serve with fresh chopped green onions on top.
